Cheese Tortellini and Sausage with Red Pepper Sauce

This meal is soooo yummy, I just had to share! I found the recipe in a magazine, and I've shared the recipe with you at the end of this post. You're definitely going to want to try it.

Assemble your ingredients.

First we chop the half onion.

Brown the sausage and the onions together.

While the sausage is cooking, cook the tortellini according to the directions on the package.

Once the sausage is cooked and no longer pink, you'll need to drain it. I found a great tip for draining meat. I used to look for an empty can or jar, but its frustrating if you've just taken out the recyclables. So I learned a great place to put the hot grease as you wait for it to cool (because you definitely don't want to dump it down the drain no matter how many times the boy tries to do that) is to put some foil in a bowl. When the grease cools, you can just take out the foil and throw it in the trash.

Then you get to use the toy to puree the roasted red peppers to make a sauce. 
Any recipe that uses the food processor is good with me!

To add some more flavor and bulk to the sauce, add a can of pizza sauce.

Then mix the sauce and drained tortellini with the sausage and onions and heat to serving temperature.

Sprinkle with mozzarella cheese and serve!

Doesn't that look delicious? My stomach is growling as I write this up. We just had it last week, but already I want it again! And the leftovers are just as good.

Here's the recipe:

1 pkg (20 oz) refrigerated cheese tortellini
1 lb. bulk Italian sausage
1/2 cup chopped onion
2 jars (7 oz. ea) roasted sweet red peppers, drained
1 can (15 oz) pizza sauce
mozzarella cheese

Cook tortellini according to package directions.
Cook sausage and onion in a large skillet over medium heat until meat is no longer pink; drain.
Process red peppers in a food processor until smooth.
Add peppers, pizza sauce, and drained tortellini to the skillet; stir and heat through.
Sprinkle with mozzarella cheese.

The invitations

Now that the wedding is over and I don't need to worry about any unexpected guests showing up, I can share the invitations I designed. I was really happy with how they turned out and got a lot of great feedback.

You might remember from our Save the Date cards that our reception was a game theme. So I designed the invitations to look like playing cards.
